Easy Gumbo

I’ve made this several times with several different alternatives. My wife hates fish so I make a pot of the shrimp for me and a pot of the Ground Turkey or Chicken versions for her.

A Gumbo Recipe for Shrimp and an Alternative for Beef or Chicken

Ingredients:

1 can of diced tomatoes with green chiles
1/2 can of diced tomatoes
3/4 of 1 large fresh hot house tomato
1 can trappeys red kidney beans (not drained)
1/2 can trappeys red kidney beans (drained)
1 bunch of green onions sliced
1 full stalk of celery sliced
1 frozen bag of pictsweet cut okra (defrost before adding)
1 bag medium sized shrimp uncooked (boil)
1 cup rice (in rice cooker)
2 limes (for shrimp or chicken) squeezed then left in hot simmer to taste (1 lime for ground beef/turkey)

Generously add to taste:
Parsley flakes
Black Pepper
Adobo
Salt
Creole seasoning

The Process:

Setup the Rice cooker and get that going first and foremost. Depending on the rice cooker you have, the rice cooking could take a little bit of time.

Put 1 bag medium sized shrimp uncooked (and thawed) into boiling water and wait for it them to turn pink and tender (usually 3-5 minutes or so)

Note: If making the chicken/turkey/or beef versions dice down into smaller sections and cook in skillet at this point.

In a large pot add:

1 can of diced tomatoes with green chiles
1/2 can of diced tomatoes
3/4 of 1 large fresh hot house tomato
1 can trappeys red kidney beans (not drained)
1/2 can trappeys red kidney beans (drained)
1 bunch of green onions sliced
1 full stalk of celery sliced
1 frozen bag of pictsweet cut okra (defrost before adding)
2 limes (for shrimp or chicken) squeezed then left in hot simmer to taste (1 lime for ground beef/turkey)

Also Add generous amounts of Adobo, Parsley flakes, Salt, Add the Pepper and Creole Seasoning to taste so as not to get it too spicy!

Whenever the Meat is done just drop into the pot and stir.

Turn on medium-high heat and wait for it to start a slow bubble then occasionally stir for the next 20-25 minutes. When not stirring put lid on to maintain heat.

After approx 25 minutes add rice and stir well then serve and enjoy!
